Baked Oatmeal Cups


Who doesn’t love a warm bowl of oatmeal in the morning? 

Unless you’re trying to get kids out the door, lunches packed and organized and maybe throw a brush through your hair! 

Some mornings I get to eat breakfast with my family, sometimes I’m on the run. These oatmeal cups are perfect for busy parents on the go, busy teens with morning sports practices, or even as a snack on the way to after school programs. 

Pro tip: Double or triple batch these and freeze. You’ll thank me later! 

 

Ingredients: 

2 cups rolled oats 

1 cup of milk 

2 eggs 

2 tsp baking powder 

2 tsp cinnamon 

1 tsp vanilla 

berries, raisins, chocolate chips, nuts, or any other favourite add ins! 

 

Directions: 

Mix the oats and milk together in a bowl and let sit for 5-10 minutes. 

Add all of the other ingredients and stir until combined 

Preheat the oven to 350F (do this after mixing the ingredients because the mixture needs to sit for a couple of minutes!!)

Divide the mixture between 8 lined muffin tins 

Bake for 15 minutes until set
