Roasted Beets


We all know that we should eat the rainbow, but it’s not always easy getting your pink and purple in from a vegetable!

Beets are a delicious exception! Though things can get a little bit messy when they’re being prepared, they are worth it!
Beets are high in many anti-inflammatory properties, antioxidants and fiber.
Though they can be boiled as well, my personal favourite way to eat beets is roasted. Roasting allows for all of the natural sweetness and caramel flavour from the beets to be fully developed, making every bite like a little natural candy!
Lightly steaming them first makes them easier to cut and peel when the time comes.

Roasted Beets:

1.Place 8 large beets in a roasting pan and fill the pan half way with water
2. cover the pan tightly and roast on 475F for 45 minutes

3. Remove the pan from the oven and allow to cool slightly.
4. Peel beets and cut into small cubes.
5. Add back to pan with 1 tbsp olive oil, 3 cloves garlic diced and 1/2 tsp salt and continue roasting for 45 more minutes
