Peanut butter Banana (N)Ice Cream

I am an ice cream lover! I could eat it all day, every day- especially in this July heat! And though I’m all for enjoying delicious treats from time to time, I don’t think that every Monday, Friday and every other day in between quite count as enjoying in moderation.

And that’s where this (N)Ice cream comes in. It’s delicious, creamy and refreshing in a way that feels indulgent. But combing healthy fiber from bananas and a protein punch from natural peanut butter, it is an ideal “Nice” snack in every way!

Enjoy it on its own as a snack or as a perfect frozen starter for your next smoothie!

Peanut butter (N)Ice Cream

serves: 2

Ingredients:

3 large bananas, frozen (I like peeling and breaking bananas into large chunks before freezing)

2 tbsp All Natural Peanut butter

1/2 tsp cinnamon

1 tsp cocoa powder

Directions:

1. Add all ingredients to a food processor and blend until smooth!

2. Drizzle with honey for desired sweetness or top with fried fruit or crushed nuts!

*freeze leftovers as a smoothie starter- it isn’t quite as creamy out of the freezer. OR freeze leftovers with a popsicle stick in popsicle molds and enjoy like that!
