Important fact: I do not do complicated in the kitchen. I like simple recipes that let you get in, get out and get EATING!
For that reason, if I am pulling out an extra utensil you know it must be worth it. This dressing requires a food processor to puree the onion and garlic. the fresh aromatics really help to make it flavourful and delicious, but if you REALLY REALLY don’t want to spend the time washing, you can substitute crushed garlic in this recipe.
Salad ingredients:
4 large beets roasted (or steamed) and sliced into wedges
1 cup frozen peas
1 large red pepper chopped
1 head of asparagus steamed and chopped into 1″ pieces
dressing: 1/4 olive oil
1/2 cup lemon juice
salt and pepper to taste
1/2 red onion
2 cloves garlic
2 tsp sugar (or sweetener)
directions:
1. prepare salad ingredients and assemble in a bowl
2. in a food processor, add all dressing ingredients and puree until smooth
3. dress immediately before serving and enjoy!
