Silky squash Zucchini Soup


It always amazes me how food can take you back in time. When I was younger my grandfather used to take my family and I out to eat all the time and for me that meant squash zucchini soup!
Just one bite and I’m right back to being a ten year old kid. On these cold winter days sometimes some good soup and some good memories are all you need to warm you right up!

Silky squash zucchini soup
ingredients:
1 small butternut squash peeled and seeded
1 large onion peeled and quartered
3 large zucchinis cut into thirds
1 large sweet potato (unpeeled) and roughly chopped
4 cloves garlic
6 cups water or chicken broth
2 tsp salt
2 tsp pepper

1. roughly chop all vegetables and add all ingredients to a pot and bring to a boil
2. turn down to simmer for 1 hour until all vegetables are tender
3. allow to cool slightly before pureeing with an immersion blender. (I left some chunks in mine but if you want it completely smooth simply blend it further)
4. Enjoy!!
