“2” Ingredient Pancakes


I’ve said before that I am the WORST at following a recipe. Lie really the WORST. I try and try but I think I am just incapable of seeing a recipe properly through based on the actual instructions. But this weekend seeing that I had a couple of bananas getting overripe I decided I had to try the two ingredient pancakes I’ve always heard abut.
So I added the bananas and eggs together…..but then looking at it I decided oats sounded good, and then decided that peanut butter was a good idea…because really when is peanut butter not a good idea. So epically failed at even a two ingredient recipe but trust me nobody was complaining.

4 Ingredient Pancakes
2 ripe Bananas
4 eggs
1/2 cup peanut butter
1 cup oats
butter for the pan

Directions:

Mix all ingredients in a bowl until combined
Heat a pan on the stove on high and add butter to coat the bottom
Using 1/4 cup measuring cup scoop batter into the pan
Cook for 1 minute on each side flipping carefully

Serve with more melted peanut butter and crushed peanuts!
