Oats on the Go!


I am all about warm, satisfying breakfasts in the morning! But with two toddlers to get dressed, and fed all while trying to get organized myself….let’s just say it’s not exactly a house of zen at our place! That’s where these oatmeal “cookies” come in. With the nut butter and spices, they take your oatmeal to a whole new level, and freezing them means breakfast is done in a flash. Just add to a bowl with half a cup of your milk of choice, pop into the microwave for thirty seconds, and breakfast is served!
The best part is that this is a great breakfast for children of all ages. My one year olds love eating the oat chunks with a spoon or their hands!

all measurements are aproximate***

ingredients:

2 cups regular or quick cooking oats
1 cup nut butter of choice
1 tsp cinnamon
1 tsp nutmeg
2 tbsp honey (or sweetener of choice)
1 tsp vanilla

directions:

mix all ingredients and form into golf-baa sized balls. Place the balls in a ziplock bag in a single layer on a cookie sheet and place in the freezer. Pull them out as necessary and thaw with above directions!

**alternatively you could add 1- 2 eggs to the recipe to turn them into actual cookies! bake for 10-12 minutes at 350 F and enjoy them as is or thaw them the same way! It just makes it a little but more “warm granola” than oatmeal
**I have also just added all of the ingredients into a bowl (or reduced the whole recipe by 1/2) including the egg. Microwave on high for 1 minute, stir and continue microwaving 30 seconds at a time until it is set. Voila- oatmeal bites in minutes!
